First harvest means the youngest, most tender leaves, picked in spring before the heat arrives. Shade-grown to increase L-theanine — the compound that gives matcha its calm, unhurried energy. The kind that doesn’t spike. Doesn’t crash.

Uji Matcha
Ujitawara, tucked into the mountains of Kyoto Prefecture, is where the Harima family has farmed tea since 1858. Sharp morning mists. Cool evenings. Calcic soils farmed patiently, without pesticides or synthetic fertiliser for over 50 years.

By hand. With patience. The weeding done slowly, season by season. The soil given time to recover.

That is the matcha in your bowl.
Uji Matcha

How to make it

Simply made

Three steps. Five minutes. Early morning.

Sift

Half a teaspoon into your bowl. Sifting breaks up clumps for a smoother cup.

Whisk

Add 60ml of water at 70–80°C. Whisk in a W motion for 20–30 seconds until a fine foam forms on top.

Receive

Drink straight or add 150ml of cold or steamed milk. Pause before the first sip.

How long does shipping take?

Ceremonial grade means first harvest — the youngest leaves, picked in spring. Shade-grown to develop L-theanine and chlorophyll, then stone-milled slowly. The result is a vivid deep green, smooth and creamy, made to drink straight. Not the older, harsher leaves used for baking.

Around 25 cups using half a teaspoon per serve. Four to five weeks of a daily morning practice. After that, refill tins are available in the shop.

70–80°C. Hot, but not boiling. Boiling water makes matcha bitter. Let the kettle sit for two minutes after boiling, or use a temperature-controlled kettle.

Yes. Nami matcha is available separately in 50g, 300g and 1kg bags  from the shop.
